Fresh strawberry sauce is the perfect toping for pancakes, waffles, ice cream or your favorite dessert.
I just love strawberries, and so do my kids. I can’t keep a container of strawberries in my house for more than a day. So when I decided to make this, I had to fight my kids out of the kitchen to keep them from eating the strawberries.
This version of my strawberry sauce was made with baking Stevia to keep it sugar free. If you prefer not to have sugar alternatives feel free to swap it out for regular sugar, agave or maple syrup. Keep in mind that Stevia is much sweeter than regular sugar, so adjust the portions accordingly.
As the strawberries start to break down, hit with the lemon juice to give it a zing and bring out the flavors of the strawberry. I like to add additional fresh strawberries at the end for contrasting textures and flavors. Strawberry sauce cooks very quickly and can easily be stored in the fridge or freezer for future use.

Ingredients
- 1 1/2 lbs of Strawberries (quartered)
- 4 Tbsp Water
- 2 tsp Pyure Organic Granular Stevia Sweetener (or any granular stevia)
- 1/s tsp Vanilla Extract
- 1/2 Lemon (juiced)
Instructions
- Put 1lb of strawberries, water and lemon juice in a small pot, leaving 1/2 strawberries to the side.
- Cook strawberries on low to medium heat until strawberries start to break down approx 5-7 minutes.
- Add Stevia sweetener and vanilla extract. Cook for additional 2 min.
- Toss in the additional fresh strawberries and serve on top of pancakes, cake, ice cream or your favorite dessert.
